On The Menu Monday 8/14/17-8/20/17

I can’t believe we are already in mid-August – my daughter starts first grade in 2 weeks – it feels like the summer is flying by! This week is kind of busy with soccer practices, a soccer game, dentist appointments and late nights at work. Here is my meal plan for the week:

Monday 

Crock Pot Beef Tips with a side of rice and broccoli – I use this recipe from Pinterest. It’s one that I’ve made several times and it is a hit with the husband and the kids.

Tuesday

Chicken Quesadillas – I don’t use a recipe per say, I make my own concoction where I sauté the chicken, cut up peppers and onions, sauté them and put them aside. I then place a couple of tortillas with cheese on them, put the chicken, peppers and onions on top of the tortillas and cheese, cover with more cheese and another tortilla and pop it in the oven on 325 for a couple of minutes until it is melted and gooey. We love this dinner.

Wednesday

Stuffed Peppers in the Crock Pot – I love this recipe because it uses hot Italian sausage as part of the filling for the stuffed peppers. It’s quick to make, easy and delicious. Wednesday is going to be another relatively late night for me since I don’t get home until 6pm. My husband can tend to the peppers and make sure they don’t burn. They’ll be all ready when I get home at 7pm.

Thursday

Chili Mac in the Crock Pot – this week is the week of crock pot meals because like I said, it is a busy week. My daughter has soccer practice Tuesdays and Thursdays so having dinner done in the crock pot is one less thing I have to worry about. My kids love this recipe because they are pasta fanatics. It’s a good, filling dinner for a Thursday night.

Friday

Chicken Parmesan – quite possibly my husband’s favorite meal. I cheated a little bit by buying chicken cutlets from the grocery store already seasoned and breaded. This way all I have to do is fry them up, throw some sauce on them and some cheese – pop it in the oven and dinner is done! I serve mine with a side salad and my husband loves garlic bread (who doesn’t?!).

Saturday

Beef Stew in the Crock Pot – a perfect dinner after a long day of running around and doing errands. This recipe is great and really flavorful. Served with fresh, crusty Italian bread – ugh, so good!

Sunday

Dinner out or take out. At this point I am not really sure what we will have planned but we will be out for most of the day, so we will either eat out or pick something up and take it home.
