How to Make the Best of Monday: Meal Planning

Happy Monday Friends! Welcome to Meal Plan Monday! I completed my meal plan and ordered my groceries on Sunday. I have quite a few things in my freezer to make dinners with so I luckily did not have to buy too much meat. I thought I would share what’s for dinner in our house this week. 

Monday: Baked Spaghetti – I grew up on this recipe. This is my grandmother’s recipe and she used to make it for us all the time – in fact we would ask her to make it for us and have Baked Spaghetti dinner dates.

Tuesday: Tacos – simple, delicious & gets the job done.

Wednesday:  BBQ Pork Rib Sandwiches – This is super simple – boneless pork ribs, adobo for seasoning Sweet Baby Ray’s Sweet & Spicy BBQ Sauce – in the crockpot for 6 hours on low – serve it on some brioche buns with coleslaw.

Thursday: Crockpot Apricot Chicken – I serve this with rice and a veggie. This week it will be asparagus.

Friday: Crockpot Beef and Noodles – This is another recipe that gets heavy rotation in my house. There are never any leftovers.

Saturday: Teriyaki Chicken Stir Fry with Rice 

Sunday: Meatloaf – I love making this because any leftover meatloaf we have I will freeze and then use it for meat sauce for Spaghetti one week.

Backup Options: Frozen pizza, Frozen Ravioli, Crockpot Lemon Chicken

So that about does it for this week’s meal plan. What are you guys planning for dinner this week?
