Dad’s Meatloaf

My Dad is “famous” in my family for his meatloaf. It is filling, delicious and it doesn’t require too many ingredients or take that long. In my opinion it is the perfect dinner for a cold winter night.

Ingredients

1.5-2lb 93% lean ground beef

1 medium yellow onion

1/2 bottle Heinz Chili Sauce

1 egg

1/2 cup breadcrumbs (or to desired consistency)

 

Preheat oven to 375 degrees. Dice onion. In a bowl, add ground beef, egg, onions, chili sauce and bread crumbs. Using hands, mix together all ingredients until well-incorporated and reach a good consistency (not too wet, not too dry). Spray baking pan/pyrex dish with non-stick cooking spray. Put mixture into pan and mold into loaf shape. Spread a little more chili sauce on top of meat. Bake in the oven for approx. 45-min. Pair with mashed potatoes, roasted potatoes, your favorite veggie & voila – you have an amazing meal for a cold winter night. ( Hint: Whatever meatloaf I don’t use, I freeze and will break it up and add to pasta sauce for a nice meaty pasta sauce for dinner). Enjoy!
