3 Quick Meals for Busy Nights

We are full swing into soccer season and to say the least – it is hectic. 2 nights a week I go from work, to home to pick up my daughter, to practice then back home. The other nights I work late, and Saturday we have games. If I don’t have meals ready, we will end up ordering take out and I try to avoid that at all costs.  I like meals that are easy to prep, don’t contain a lot of ingredients and easy to clean up (don’t we all?). So, here are 3 tried and true (kid loved, hubby approved) quick meals for those crazy nights of the week where getting a wholesome fresh meal on the table seems practically impossible.

 

Crock Pot Chicken Tacos

  • 3-4 Boneless, Skinless Chicken Breasts
  • (1) 15.5 oz jar of your favorite salsa (I used Tostito’s Chunky Salsa in Medium)
  • Sprinkle of Taco Seasoning

Place the chicken breasts on the bottom of the crockpot. Sprinkle chicken breasts with taco seasoning, to taste. Pour jar of salsa over chicken, ensuring all parts are covered. Place on high for 4 hours, or low for 6-8 hours.

When chicken is cooked, transfer to a bowl and shred the chicken. Serve on warm tortillas with your favorite toppings (avocados, sour cream, lettuce – the possibilities are endless!)

 

Crock Pot Apricot Chicken

  • 3-4 Boneless, Skinless Chicken Breasts

    Crock Pot Apricot Chicken over Rice with Asparagus
  • 1/2-3/4 of Jar of Apricot Jam (I used Smuckers)
  • 1/2 Bottle Catalina Dressing (I used Kraft)

Place chicken breasts on the bottom of the crockpot. Pour in jam over chicken then pour in Catalina dressing. Mix together over chicken, spreading evenly. Cook on low 6-8 hours. Serve over rice or with mashed potatoes.

Crock Pot Beef and Noodles

  • 1.5 lbs beef stew meat
  • 1 (10.5 oz) can Cream of Celery soup
  • 1 (10.5 oz) can French Onion Soup
  • Noodles

Place beef in bottom of crockpot. Pour in cream of celery soup and French onion soup and spread evenly over stew meat. Cook on low 6-8 hours of high for 4 hours. Serve over egg noodles or with mashed potatoes.
