Spanish Meat Lasagna

Happy Monday everyone! It is cold and rainy here, a perfect night to share a hearty, family friendly recipe. This Spanish Meat Lasagna recipe is a crowd pleaser that my mother-in-law makes on a regular basis and it does not disappoint. If you love a meaty lasagna with a ton of flavor, this recipe is for you!

One of the biggest draws to my blog are my Puerto Rican recipes, including this one for Carne Guisada.

This week my mother-in-law in town and I thought it would be the perfect time to share this super easy and delicious recipe for her Spanish Meat Lasagna. It is one of the family favorites and it tastes even better the next days (if there are any leftovers).

Ingredients

3/4 lb ground beef

1 packet Sazon Ajo con Cebolla seasoning

1 packet Sazon Caldo de Jamon seasoning

1 packet Chicken Bouillon seasoning

1 Packet Sazon con Achiote seasoning

1 Bag Finely Shredded Mozzarella Cheese

6-7 Green Olives, finely chopped

1 large ladle of Sofrito

4 oz Goya Tomato Sauce

1 Tbsp Adobo seasoning

1 Box Lasagna Noodles

Your Favorite Pasta Sauce (I used Prego Meat Sauce)

Instructions

1. Place ground beef in a pot and fill with water covering ground beef.

2. Put in all packets of seasoning, ladle of sofrito, olives, adobo, tomato sauce and stir well.

3. Boil ground beef until the beef is brown and “dry”. Every so often scoop out the grease that rises to the top. It will take about 30-40 minutes.

4. When ground beef is almost done, put on a pot to boil water and add a tablespoon of oil. This helps keep the noodles from sticking together.

5. In a lasagna pan, place a bit of pasta sauce on the bottom of the pan and begin layering lasagna noodles.

6. After the first lasagna noodles are down, place half of the meat over the lasagna noodles and spread the meat around evenly.

7. Place another layer of lasagna noodles over the meat.

8. Repeat with another layer of meat and then noodles.

9. Pour some pasta sauce over the layer of lasagna noodles.

10. Sprinkle mozzarella cheese over the top.

All done!

11. Place lasagna in a 350 degree over for about 15-20 minutes until cheese is nice and melted on top.

12. Enjoy!
