On the Menu Monday 8/7/17-8/13/17

I hope everyone is having a good Monday! I’ve basically been in bed all day with a horrible migraine, but am starting to feel a little better and wanted to share my meal plan for the week.

My Weekly Menu Plan

Monday – Today is supposed to be my late day but I called off of work because I was incapacitated with a migraine. Usually I don’t get home until 8pm, but obviously today I was home. The meal plan was a frozen pizza and that stayed the same because I do not move from my bed until about 4pm. My husband made a side salad to go with it.

Tuesday – Oven Baked Chicken Breasts. This is a recipe that is from a shake and bake box – I get split chicken breasts from the store, use shake in bake and put them in the oven. I pair it with broccoli and mashed potatoes.

Wednesday – 2 weeks ago we tried this recipe with chicken, pesto, tortellini and veggies – well it was a serious hit. So we will be having that again this week.

Thursday – I am off of work for a four day weekend this week (yay!!) so for dinner I have planned a chicken stir fry. I marinade my chicken in orange juice and teriyaki sauce all night and the next day it gives it great flavor for the stir fry. I use a frozen vegetable bag and pair it with rice. Super easy and delish!

Friday – My husband has a show that he has to work so he has to leave at 7pm. I am planning on barbecued pork chops on the grill before he has to leave. I will also make yellow rice with corn to go with.

Saturday – Mackenzie requested her favorite meal of “mommy’s ravioli’s” so I will be making that this night. We use Buitoni raviolis, which makes it an easy meal to make.

Sunday – Steaks on the grill – with asparagus and baked potatoes or corn. Steaks on Sunday are becoming kind of a tradition.
