Crockpot Tomato Basil Chicken

Soccer season has started & the busy weeknights means a ton more crockpot meals for dinner to make life easier. I have been trying to find different recipes to try to keep things interesting. My family loves Margherita pizza, so I thought maybe trying to find a way to make something similar in the crockpot with chicken would be an interesting alternative. I found this Tomato Basil Chicken recipe on the Recipe Rebel, and thought I would try it – and it definitely did not disappoint. Everyone had seconds, even the kids!

Tomato Basil Chicken Ingredients

14oz Can Diced Tomatoes (Italian herbs)

3/4 cup Tomato Pasta Sauce (I used plain marinara sauce)

3/4 Cup Heavy Cream

2 TBSP Cornstarch

2 TSP Minced Garlic

1 TSP Salt

1/2 TSP Dried Basil

1/4 TSP Black Pepper

4 Boneless Skinless Chicken Breasts

2 TBSP Finely Chopped Basil

Instructions

  1. Add diced tomatoes and pasta sauce to 4-6 qt slow cooker.
  2. Whisk together cream and cornstarch in a separate bowl and add to the crockpot.
  3. Stir in garlic, salt, basil, and pepper.
  4. Add chicken breasts and press into sauce – I covered chicken with some of the sauce to give it more flavor.
  5. Cook on low for 3-5 hours (Mine was done in 4). Exact cook time will depend on your crockpot, but when the meat thermometer reads 165 degrees F, it is done.
  6. Stir in fresh basil and serve over rice, pasta, or with a salad and veggies.

I served mine over spaghetti and only put the fresh basil on the dishes meant for my husband and I. I added some Parmesan cheese to our plates and man it was delicious! The chicken was tender, juicy & flavorful and it was really easy to make. This meal will definitely a go to in my rotation for crockpot dinners. The only thing that I will do differently next time is make more because at the end of dinner there was nothing left for leftovers.
