Crockpot Chicken Cacciatore

It’s Fall and that means bring on ALL the comfort foods and crockpot meals! If you need a healthy and quick weeknight recipe that the entire family will gobble up, you’re in the right place! I have this super easy Crock Pot Chicken Cacciatore recipe for you today! It is a delicious combo of tender, shredded chicken, tomatoes, onions and peppers that can be served over spaghetti or rice for a super easy dinner. It is an Italian comfort food that will make your house smell AMAZING! Here’s how I did it:

Recipe Ingredients

1 Red Bell Pepper (diced)

1 Yellow Pepper (diced)

1 Yellow Onion (diced)

2-3 Large Chicken Breasts (or 5-6 chicken thighs)

1 28oz Can Diced Tomatoes

4oz Tomato Paste

1 28oz Can Crushed Tomatoes

2-3 Bay Leaves

3 Cloves Garlic

2 teaspoons oregano

2 teaspoons basil

1/2 teaspoon red pepper flakes

1/2 teaspoon salt and pepper

Spaghetti or Rice

Crock Pot Chicken Cacciatore Recipe

1. Place diced veggies (onion & peppers) at the bottom of the crockpot.

2. Place chicken breasts or thighs over veggies.

3. Cover chicken with diced tomatoes, crushed tomatoes, tomato paste.

4. Add seasonings over top.

5. Cook on low for 6-8 hours or high for 4 hours.

6. Remove bay leaves.

7. Serve chicken over rice or pasta, whatever you choose.

This meal is so easy to make with only about 15 minutes of prep work. You can save the leftovers for lunch during the week, which is usually what I end up doing. You can also use fresh or frozen chicken in this recipe, which is great if you don’t have time (or forgot, like me – I used frozen).
