Amazing Apricot Chicken in the Crockpot

Hey everyone! It’s Tuesday night, and I wanted to share another easy & delicious crockpot meal. I am a huge fan of the slow cooker, if you can’t tell, because it allows me to ensure dinner is done whether I’m home or working late. I have seen a ton of different recipes for Apricot Chicken on Pinterest, but this particular recipe is the one I have cooked before and I love the simplicity of it. This recipe is just dump and go, with no chopping involved which is my all time favorite type of slow cooker meal on busy weeknights. It requires only a handful of ingredients, all of which are budget friendly, which these days is a HUGE win.

Ingredients

2 lbs. boneless skinless chicken breasts (you can use chicken thighs as well)

1 cup apricot preserves

1 cup Catalina salad dressing

1 oz. packet Lipton onion soup mix

1/8 tsp. black pepper

2 pinches red pepper flakes (optional)

How to Make Apricot Chicken in the Crockpot:

  • Place the chicken in to the bottom of the slow cooker. Add the apricot preserves, Catalina dressing, onion soup mix, pepper and pepper flakes. Stir the sauce ingredients together over the chicken.
  • Cover and cook on LOW for 6 hours.
  • Serve over rice or mashed potatoes with your favorite veggie or side salad.
  • Enjoy!

I served my chicken over white rice (you can also do a pilaf) with a side salad. My kids and hubby loved it and there was enough left for my hubby to take to work (he works nights).
